Sweet and Savory Plum Glazed Chicken

1Preheat your oven to 375°F (190°C).

2In a medium saucepan over medium heat, combine the chopped plums, brown sugar (½ cup), soy sauce (¼ cup), apple cider vinegar (¼ cup), minced garlic (2 cloves), and grated ginger. Stir well and bring to a simmer.

3Cook the mixture for about 10-15 minutes, stirring occasionally, until the plums break down and the sauce thickens slightly. If you prefer a thicker glaze, mix the cornstarch with water in a small bowl and add it to the sauce, stirring until thickened. Remove from heat and set aside.

4Season the chicken thighs (4) with salt and pepper on both sides.

5In a large oven-safe skillet, heat the olive oil (1 tablespoon) over medium-high heat. Add the chicken thighs (4), skin-side down, and sear for about 5-7 minutes until the skin is golden brown and crispy. Flip the chicken and cook for an additional 3-4 minutes on the other side.

6Pour the plum glaze over the chicken thighs (4), ensuring they are well coated.

7Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

8Remove from the oven and let the chicken rest for a few minutes before serving. Serve with extra plum glaze drizzled on top.
