Creamy Rotisserie Chicken Salad with Red Onion

1In a large mixing bowl, combine the shredded rotisserie chicken (2 cups), mayonnaise (½ cup), finely chopped red onion (¼ cup), Dijon mustard (1 tablespoon), lemon juice (1 tablespoon), garlic powder (¼ teaspoon), and paprika (¼ teaspoon).

2Mix all the ingredients together until well combined. Taste and season with salt and pepper as needed.

3If desired, fold in the chopped fresh parsley (¼ cup) for added flavor and color.

4Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

5To serve, spoon the chicken salad onto slices of bread or (4) onto lettuce leaves for a lighter option.
