Creamy Groundnut Delight with Jaggery

1Begin by roasting the groundnuts in a pan over medium heat until they are golden brown and fragrant, about 5-7 minutes. Stir frequently to prevent burning. Once roasted, let them cool slightly, then remove the skins by rubbing them between your hands or using a clean kitchen towel.

2In a blender, add the roasted groundnuts and blend them into a coarse powder. You can leave some chunks for texture if desired.

3In a saucepan, combine the milk (2 cups), sugar (½ cup), and grated jaggery (½ cup). Heat over medium heat, stirring continuously until the jaggery (½ cup) and sugar (½ cup) dissolve completely. Bring the mixture to a gentle simmer.

4Once the milk (2 cups) mixture is simmering, add the groundnut powder to the saucepan. Stir well to combine and let it cook for an additional 5-10 minutes, allowing the flavors to meld and the mixture to thicken slightly.

5Remove the saucepan from heat and let the mixture cool for a few minutes. You can serve it warm or chill it in the refrigerator for a refreshing dessert.

6If desired, garnish with a few whole roasted groundnuts or a sprinkle of jaggery (½ cup) on top before serving.
