Spicy Garlic Potato Toast with Tomato Sauce

1Peel and dice the potatoes (4 medium) into small cubes. Boil them in salted water for about 10-15 minutes or until tender. Drain and set aside.

2In a large skillet, melt the butter (2 tablespoons) over medium heat. Add the minced garlic (4 cloves) and sauté until fragrant, about 1-2 minutes.

3Add the boiled potatoes (4 medium) to the skillet and stir-fry for about 5 minutes until they start to get crispy. Season with salt and pepper to taste.

4In a small bowl, mix together the tomato sauce (1 cup), chili sauce (2 tablespoons), and soy sauce (2 tablespoons). Pour this sauce over the potatoes (4 medium) and stir well to coat evenly. Cook for another 2-3 minutes until heated through.

5While the potatoes (4 medium) are cooking, toast the slices of wheat bread (4) until golden brown.

6In a separate pan, fry the eggs (4 large) sunny-side up or to your preference.

7To assemble, place a generous portion of the spicy garlic (4 cloves) potatoes (4 medium) on each slice of toasted bread. Top with a fried egg and drizzle with extra tomato sauce (1 cup) if desired.
