Spicy Cheese Paneer Potato Delight

1Heat oil (2 tablespoons) in a large pan over medium heat. Add cumin seeds (1 teaspoon) and let them sizzle for a few seconds.

2Add the chopped onions and sauté until they turn golden brown.

3Stir in the minced garlic (2 cloves), grated ginger (1 teaspoon), and chopped green chili (1) (if using). Sauté for another minute until fragrant.

4Add the diced potatoes (2 medium) to the pan and mix well. Cook for about 5-7 minutes, stirring occasionally, until the potatoes (2 medium) start to soften.

5Sprinkle in the salt (1 teaspoon) and red chili powder (1 teaspoon), mixing well to coat the potatoes (2 medium) evenly.

6Add the cubed paneer (250 g) to the pan and gently fold it in with the potatoes (2 medium). Cook for another 5 minutes, allowing the paneer (250 g) to warm through.

7Reduce the heat to low and sprinkle the grated cheese (1 cup) over the top. Cover the pan with a lid and let it cook for 3-5 minutes until the cheese melts and becomes gooey.

8Once the cheese has melted, remove the lid and give it a gentle stir to combine everything.

9Garnish with fresh coriander leaves before serving.
