Spicy Veggie Pasta Delight

1Bring a large pot of salted water to a boil. Add the pasta (200 g) and cook according to package instructions until al dente. Drain and set aside.

2In a large skillet, heat the oil (2 tablespoons) over medium heat. Add the chopped green chillies (2) and sauté for 1-2 minutes until fragrant.

3Add the mixed spices (1 teaspoon) to the skillet and stir for another minute to release their flavors.

4Add the mixed veggies (1 cup) to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender but still crisp.

5Season the veggie mixture with salt and pepper to taste.

6Add the cooked pasta (200 g) to the skillet and toss everything together until the pasta (200 g) is well coated with the spices and veggies.

7Remove from heat and stir in the fresh coriander (¼ cup) just before serving.
