Spicy Cheesy Potato Bake with Veggies

1Preheat your oven to 200°C (400°F).

2In a large mixing bowl, combine the sliced potatoes (4 medium), diced tomatoes (2 medium), grated cheese (1 cup), chopped green chilies (2), chili flakes (1 tablespoon), oregano (1 teaspoon), sliced olives (½ cup), grated carrot (1 medium), and diced capsicum. Mix well to ensure all ingredients are evenly distributed.

3Drizzle olive oil (2 tablespoons) over the mixture and season with salt and pepper to taste. Toss everything together until the potatoes (4 medium) and vegetables are well coated with the oil and seasonings.

4Transfer the mixture into a greased baking dish, spreading it out evenly.

5Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

6After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes (4 medium) are tender and the top is golden and bubbly.

7Once done, remove from the oven and let it cool for a few minutes before serving.
