RNT Delight: A Savory Rice Noodle Treat

1Soak the rice noodles (200 g) in warm water for about 20-30 minutes until they are soft. Drain and set aside.

2In a large skillet or wok, heat the sesame oil (1 tablespoon) over medium-high heat. Add the minced garlic (2 cloves) and sauté for about 30 seconds until fragrant.

3Add the sliced chicken breast (150 g) to the skillet and cook for about 5-7 minutes until the chicken is cooked through and no longer pink.

4Stir in the julienned bell peppers (100 g) and carrots (50 g), cooking for an additional 3-4 minutes until they are slightly tender but still crisp.

5Add the soaked rice noodles (200 g) to the skillet, followed by the soy sauce (2 tablespoons), oyster sauce (1 tablespoon), sugar (1 teaspoon), and black pepper (½ teaspoon). Toss everything together to combine well and heat through for about 2-3 minutes.

6Remove from heat and stir in the chopped green onions (2) and cilantro.

7Serve the RNT Delight hot, garnished with lime (1) wedges on the side for an extra zing.
