Chocolate Coconut Egg Bites

1Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.

2In a mixing bowl, crack the eggs (4 large) and whisk them until they are well beaten.

3Add the granulated sugar (½ cup) to the eggs (4 large) and continue whisking until the mixture is smooth and creamy.

4Sift in the unsweetened cocoa powder (¼ cup), and mix until fully incorporated.

5Stir in the shredded coconut (½ cup), vanilla extract (1 teaspoon), salt (¼ teaspoon), and baking powder (½ teaspoon) until everything is well combined.

6Pour the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

7Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean.

8Remove from the oven and let the bites cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
