Sweet Gram Flour Fudge

1In a large mixing bowl, combine the gram flour and water (1 cup). Whisk until you have a smooth batter without lumps.

2In a heavy-bottomed pan, heat the ghee (½ cup) over medium heat until melted.

3Add the gram flour batter to the melted ghee (½ cup), stirring continuously to avoid lumps.

4Cook the mixture on low heat, stirring constantly, until it thickens and starts to leave the sides of the pan, about 10-15 minutes.

5Once thickened, add the sugar (1 cup) to the mixture and continue to stir until the sugar (1 cup) is fully dissolved and the mixture is well combined.

6Cook for an additional 5-7 minutes until the mixture is glossy and pulls away from the pan easily.

7Remove the pan from heat and pour the mixture into a greased plate or tray, spreading it evenly with a spatula.

8Allow the fudge to cool completely at room temperature, then cut into squares or desired shapes.
