Delightful Lavender Honey Scones

1Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2In a large mixing bowl, whisk together the flour, sugar, baking powder (1 tablespoon), and salt (½ teaspoon) until well combined.

3Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

4In a separate bowl, mix together the heavy cream (½ cup), honey (¼ cup), egg (1 large), vanilla extract (1 teaspoon), and dried lavender until well combined.

5Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; the dough should be slightly sticky.

6Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a circle about 1 inch thick.

7Using a sharp knife or a pizza cutter, cut the dough into 8 wedges and place them on the prepared baking sheet.

8In a small bowl, beat the additional egg (1 large) and brush it over the tops of the scones for a golden finish.

9Bake in the preheated oven for 15-20 minutes, or until the scones are lightly golden on top.
