Mystery Pie Delight

1In a large bowl, combine the flour, sugar (1 teaspoon), and salt (½ teaspoon). Add the diced butter and mix until the mixture resembles coarse crumbs.

2Stir in the ice water (6-8 tablespoons), one tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

3Preheat your oven to 425°F (220°C).

4In another bowl, mix the granulated sugar (1 cup), cornstarch (¼ cup), cinnamon (1 teaspoon), nutmeg (¼ teaspoon), allspice (¼ teaspoon), vanilla extract (1 teaspoon), lemon juice (1 tablespoon), and raisins (if using).

5Roll out one disc of dough on a floured surface to fit your pie pan. Place the rolled dough into the pan and fill it with the sugar (1 teaspoon) mixture.

6Roll out the second disc of dough and place it over the filling. Seal the edges by crimping with a fork or your fingers. Cut slits in the top crust to allow steam to escape.

7Brush the top crust with beaten egg for a golden finish.

8Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.

9Let the pie cool for at least 2 hours before slicing and serving.
