Spicy Tomato Drumsticks

1In a large bowl, combine the chicken drumsticks (8) with salt, pepper, turmeric powder (½ teaspoon), and paprika (1 teaspoon). Mix well and let marinate for at least 30 minutes.

2Heat vegetable oil (2 tablespoons) in a large skillet over medium heat. Add cumin seeds (1 teaspoon) and let them sizzle for a few seconds.

3Add the chopped onion (1), and sauté until it turns golden brown.

4Stir in the minced garlic (4 cloves), grated ginger (1 inch), and slit green chilies (2). Cook for another 2 minutes until fragrant.

5Add the chopped tomatoes to the skillet and cook until they soften and release their juices, about 5-7 minutes.

6Sprinkle in the coriander powder (1 teaspoon) and mix well. Cook for another 2 minutes to combine the flavors.

7Add the marinated drumsticks to the skillet, stirring to coat them in the tomato mixture. Cook for about 5 minutes, turning occasionally.

8Pour in the water (1 cup), cover the skillet, and let it simmer on low heat for 25-30 minutes, or until the drumsticks are cooked through and tender.

9Once cooked, sprinkle garam masala (½ teaspoon) and fresh cilantro (2 tablespoons) over the top. Stir gently to combine.

10Serve hot with rice or bread.
