Savory Apple Soy Sauce Muffins

1Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

2In a large mixing bowl, combine the all-purpose flour (1 cup), sugar (¼ cup), baking powder (1 teaspoon), baking soda (½ teaspoon), salt (¼ teaspoon), ground cinnamon (½ teaspoon), and nutmeg (¼ teaspoon). Mix well to ensure all dry ingredients are evenly distributed.

3In another bowl, whisk together the mayonnaise (½ cup) and soy sauce (¼ cup) until smooth and well combined.

4Add the wet mixture to the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

5Fold in the diced apples (1 cup) and chopped green onions (if using) gently into the batter until evenly distributed.

6Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

7Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

8Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
