Savory Meatballs in Rich Tomato Sauce

1Heat olive oil (2 tablespoons) in a large pan over medium heat.

2Add the grated garlic (4 cloves), chopped onions, and bell peppers to the pan. Sauté for 5-7 minutes until the vegetables are softened and fragrant.

3Stir in the grated tomatoes (2 cups), tomato sauce (1 cup), and tomato paste (2 tablespoons), mixing well to combine.

4Pour in the beef broth (1 cup) and add the garlic powder (1 teaspoon), onion powder (1 teaspoon), paprika (1 teaspoon), cumin (1 teaspoon), salt (1 teaspoon), pepper (1 teaspoon), chili flakes (1 teaspoon), oregano (1 teaspoon), basil (1 teaspoon), thyme (1 teaspoon), and bay leaves (2). Stir to incorporate all the spices and ingredients.

5Add the sugar or (1 tablespoon) grated carrot to balance the acidity of the tomatoes. Bring the mixture to a simmer and let it cook for 10-15 minutes, allowing the flavors to meld together.

6While the sauce is simmering, form the ground beef (1 pound) into meatballs, about 1-2 inches in diameter.

7After the sauce has simmered, gently add the meatballs to the sauce. Cover and cook for 20-25 minutes, or until the meatballs are cooked through and tender.

8If desired, sprinkle shredded cheese (1 cup) over the meatballs and sauce, stirring gently to combine and melt the cheese.

9Serve the savory meatballs hot over pasta, rice, or with bread.
