Instant Pot Chicken Pizza Tortilla Wraps

1.Set the Instant Pot to 'Sauté' mode and add olive oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes.

2.Add the ground chicken to the pot, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Season with salt, pepper, and Italian seasoning.

3.Pour in the pizza sauce and stir to combine. Close the lid of the Instant Pot and set it to 'Manual' mode for 5 minutes.

4.Once the cooking time is complete, perform a quick release of the pressure. Open the lid and stir the mixture.

5.Lay out the tortillas on a flat surface. Spoon the chicken and sauce mixture evenly onto each tortilla, then sprinkle mozzarella cheese on top.

6.Roll up each tortilla tightly to form a wrap. You can secure them with toothpicks if needed.

7.Optional: Place the wraps back in the Instant Pot on the 'Sauté' mode for 2-3 minutes to melt the cheese and crisp the tortillas slightly.

8.Remove the wraps from the pot, slice in half, and serve warm.
