Sweet and Savory Eggplant Corn Delight

1.Preheat your oven to 400°F (200°C).

2.In a large mixing bowl, combine the diced eggplants, corn kernels, olive oil, sugar, garlic powder, onion powder, salt, and pepper. Toss everything together until the eggplants and corn are well coated with the oil and seasonings.

3.Spread the mixture evenly on a baking sheet lined with parchment paper.

4.Roast in the preheated oven for about 25-30 minutes, or until the eggplants are tender and slightly caramelized, stirring halfway through to ensure even cooking.

5.Once done, remove from the oven and let it cool for a few minutes.

6.Transfer to a serving dish and garnish with fresh parsley before serving.
