Spectacular 7-Layer Rainbow Cake

1.Preheat your oven to 350°F (175°C). Grease and flour seven 8-inch round cake pans.

2.In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3.In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

4.Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

5.Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.

6.Divide the batter evenly into seven bowls. Add a different food coloring to each bowl, mixing until the colors are vibrant and well combined.

7.Pour each colored batter into the prepared cake pans, smoothing the tops with a spatula. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

8.Once baked, allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

9.While the cakes are cooling, prepare the frosting. In a large mixing bowl, beat together the softened butter and powdered sugar until smooth and creamy. Add the vanilla extract and heavy cream, mixing until the frosting is light and fluffy. Adjust the consistency with more cream if needed.

10.Once the cakes are completely cool, level the tops if necessary. Place the purple layer on a serving plate and spread a layer of frosting on top. Continue stacking the layers in the order of blue, green, yellow, orange, and red, frosting between each layer.

11.Once all layers are stacked, use the remaining frosting to cover the top and sides of the cake. Smooth the frosting with a spatula or create swirls for a decorative finish.

12.For an extra touch, you can decorate the top with sprinkles or edible glitter. Slice and serve your beautiful 7-layer rainbow cake!
