Hearty Vegetable Medley Stew

1.Heat the olive oil in a large pot over medium heat.

2.Add the chopped onion and sauté until translucent, about 5 minutes.

3.Stir in the diced potatoes and sliced carrots, cooking for another 5 minutes until they start to soften.

4.Add the chopped tomatoes, shredded cabbage, and cauliflower florets to the pot, stirring well to combine.

5.Pour in the vegetable broth and add the peas, dried thyme, dried oregano, bay leaf, salt, and pepper.

6.Bring the mixture to a boil, then reduce the heat to low and cover the pot.

7.Let the stew simmer for about 30 minutes, or until all the vegetables are tender.

8.Remove the bay leaf before serving. Adjust seasoning with more salt and pepper if needed.
