Crispy Bacon and Ham Potato Cakes

1.In a large mixing bowl, combine the potato flakes and melted butter. Stir until well mixed.

2.Add the eggs to the potato mixture and mix until fully incorporated.

3.Fold in the chopped bacon and ham, ensuring they are evenly distributed throughout the mixture.

4.Season the mixture with salt and pepper to taste.

5.Form the mixture into small patties, about 2-3 inches in diameter.

6.Place the breadcrumbs in a shallow dish. Dredge each potato patty in the breadcrumbs, coating both sides evenly.

7.Heat oil in a large skillet over medium heat. Once hot, carefully add the potato cakes to the skillet, making sure not to overcrowd the pan.

8.Fry the potato cakes for about 4-5 minutes on each side, or until they are golden brown and crispy.

9.Once cooked, remove the potato cakes from the skillet and place them on a paper towel-lined plate to drain excess oil.
