Savory Herb-Crusted Pork Filet with Garlic Mashed Potatoes

2.In a small bowl, mix together the Dijon mustard, honey, minced garlic, dried thyme, dried rosemary, paprika, salt, and pepper to create a marinade.

4.While the pork is marinating, place the cubed potatoes in a large pot and cover them with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.
