Spicy Italian Sausage and Rice Skillet

1.In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers, and sauté until the onion is translucent, about 5 minutes.

2.Add the minced garlic and cook for an additional 1 minute until fragrant.

3.Add the Italian sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 7-10 minutes.

4.Stir in the diced tomatoes with green chilies, rice, chicken broth, Italian seasoning, red pepper flakes (if using), salt, and pepper. Bring the mixture to a boil.

5.Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice is tender and has absorbed the liquid.

6.Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
