Colorful Veggie Sandwich with Creamy Dressing

1.Start by boiling the eggs in a pot of water for about 10 minutes until hard-boiled. Once done, remove them from the pot, cool them under cold water, peel, and slice them.

2.In a bowl, combine the grated carrot, grated beetroot, and mashed potato. Add the finely chopped onion, lemon juice, salt, and pepper. Mix well to create a colorful veggie filling.

3.In a separate bowl, mix the corn starch with a little water to create a slurry. Add this to the veggie mixture to help bind it together.

4.Toast the slices of bread until golden brown and crispy.

5.Spread a layer of mayonnaise on one side of each slice of toasted bread. On two of the slices, layer the sliced tomatoes and cucumbers evenly.

6.On top of the veggies, add a generous portion of the veggie filling, pressing down slightly to ensure it holds together.

7.Place the sliced eggs on top of the filling, and drizzle with ketchup for added flavor.

8.Top with the remaining slices of bread, mayonnaise side down, to complete the sandwich.
