Crispy Potato Rusk Bites with Spiced Ketchup

1.Preheat your oven to 400°F (200°C).

2.In a large pot, bring salted water to a boil and add the diced potatoes. Cook until tender, about 10-15 minutes. Drain and let cool slightly.

3.In a mixing bowl, mash the cooked potatoes until smooth. Add the finely chopped onion, oregano, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Mix until well combined.

4.Form the potato mixture into small bite-sized balls or patties.

5.Place the rusk (or breadcrumbs) in a shallow dish. Roll each potato ball in the rusk until fully coated.

6.Arrange the coated potato bites on a baking sheet lined with parchment paper. Drizzle with olive oil to help them crisp up in the oven.

7.Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through for even cooking.

8.While the potato bites are baking, prepare the spiced ketchup by mixing the ketchup with a pinch of oregano, paprika, and a dash of cayenne pepper in a small bowl. Adjust seasoning to taste.

9.Once the potato bites are done, remove them from the oven and let them cool slightly before serving with the spiced ketchup.
