Spicy Sweet Green Chilli Chutney

1.Wash the green chillies thoroughly and remove the stems. If you prefer a milder chutney, you can deseed some of the chillies.

2.In a pan, heat the oil over medium heat. Add the cumin seeds and mustard seeds, and let them splutter for about 30 seconds.

3.Add the green chillies to the pan and sauté for 3-4 minutes until they soften slightly.

4.Stir in the grated jaggery and tamarind paste, mixing well until the jaggery melts and combines with the chillies.

5.Add salt to taste and continue to cook for another 2-3 minutes, allowing the flavors to meld together.

6.Remove the mixture from heat and let it cool slightly.

7.Once cooled, transfer the mixture to a blender, add lemon juice, and blend until smooth. Adjust the consistency with a little water if necessary.

8.Taste and adjust seasoning if needed, then transfer to a serving bowl.
