Spicy Chicken and Rice Delight

1.Rinse the rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.

2.In a large pot, heat the oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

3.Add the minced ginger and garlic to the pot, stirring for another 2 minutes until fragrant.

4.Add the chicken pieces to the pot, cooking until they are browned on all sides, about 7-10 minutes.

5.Stir in the diced tomatoes and cook until they soften, about 5 minutes.

6.Add the cumin, coriander, paprika, turmeric, chili powder, salt, and pepper. Mix well to coat the chicken with the spices and cook for another 2-3 minutes.

7.Pour in 4 cups of water and bring the mixture to a boil. Once boiling, add the soaked and drained rice, stirring gently to combine.

8.Reduce the heat to low, cover the pot, and let it simmer for 20 minutes or until the rice is cooked and has absorbed the liquid.

9.In a small bowl, beat the egg and set aside.

10.Once the rice is cooked, remove the pot from heat. Gently fluff the rice with a fork and create a small well in the center.

11.Pour the beaten egg into the well and cover the pot again for 2-3 minutes to allow the egg to steam and set.

12.Serve hot, garnished with fresh herbs if desired.
