Deliciously Soft Pathiri - Kerala's Rice Flour Pancakes

1.In a large mixing bowl, combine the rice flour and salt.

2.Gradually add warm water to the rice flour mixture, stirring continuously until a soft dough forms.

3.Knead the dough for about 5 minutes until it is smooth and pliable. If the dough is too sticky, add a little more rice flour.

4.Divide the dough into small balls, about the size of a golf ball.

5.On a clean surface, dust a little rice flour to prevent sticking. Take one dough ball and flatten it slightly with your palm.

6.Using a rolling pin, roll out the dough ball into a thin, round disc, about 6-8 inches in diameter. Make sure it is evenly rolled out.

7.Heat a non-stick skillet or tawa over medium heat. Once hot, place the rolled-out pathiri on the skillet.

8.Cook for about 1-2 minutes on one side until small bubbles form, then flip it over and cook for another 1-2 minutes until lightly golden and cooked through.

9.Remove the pathiri from the skillet and place it on a plate. Brush lightly with coconut oil to keep it soft and prevent sticking.

10.Repeat the process with the remaining dough balls, stacking the cooked pathiris on top of each other and brushing with coconut oil as you go.
