Crispy Fried Chicken Quesadillas with Cheesy Goodness

1.In a large mixing bowl, combine the shredded fried chicken, cheddar cheese, Monterey Jack cheese, diced bell peppers, diced onions, garlic powder, onion powder, paprika, cumin, chili powder, and chopped cilantro. Mix well until all ingredients are evenly combined.

2.Heat a large skillet over medium heat and lightly grease it with oil.

3.Place one flour tortilla in the skillet and spread a generous amount of the chicken and cheese mixture over half of the tortilla.

4.Fold the tortilla in half to cover the filling and cook for about 3-4 minutes, or until the bottom is golden brown and crispy.

5.Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side until it is golden brown and the cheese is melted.

6.Remove the quesadilla from the skillet and let it cool for a minute before cutting it into wedges. Repeat the process with the remaining tortillas and filling mixture.

7.Serve the quesadillas warm with sour cream and salsa on the side.
