Fried Scallions with Cilantro Sauce

1.Make the sauce in a blender by combining all sauce ingredients.

2.Heat a skillet halfway filled with vegetable oil to 350°F.

3.In a baking dish, mix dry ingredients (2 cups flour, 1 1/2 cups cornmeal or polenta, 2 tsp onion powder, 1 1/2 tsp garlic powder, 1 tbsp salt). Place buttermilk in a separate dish.

4.Cut the roots off the scallions. Trim and score the ends four times.

5.Dip scallions in buttermilk, then in the dry mix, and place on parchment paper.

6.Fry on medium heat for 3-4 minutes per batch. Drain on paper towels and season.
