Crispy Cucumber and Carrot Egg Salad Delight

1.Start by preparing the hard-boiled eggs. Place them in a pot, cover with water, and bring to a boil. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 12 minutes, then transfer them to an ice bath to cool before peeling and chopping.

2.While the eggs are cooling, wash and dice the cucumbers into small cubes. Grate the carrots using a box grater or food processor.

3.In a large mixing bowl, combine the diced cucumbers, grated carrots, and chopped hard-boiled eggs.

4.In a separate small bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper until smooth and well combined.
