Savory Boursin Stuffed Prawns with Button Mushrooms

1.Preheat your oven to 180°C (350°F).

2.In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped button mushrooms and sauté for about 5-7 minutes until they are soft and any moisture has evaporated. Season with salt and pepper to taste. Remove from heat and let cool slightly.

3.In a mixing bowl, combine the sautéed mushrooms with the Boursin cheese, fresh parsley, and lemon juice. Mix until well combined.

4.Take each prawn and carefully make a slit along the back, being careful not to cut all the way through. Open the prawn slightly and stuff it with the Boursin and mushroom mixture. Repeat this for all the prawns.

5.In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat. Place the stuffed prawns in the skillet and sear for about 2-3 minutes on each side until they are golden brown.

6.Transfer the seared prawns to a baking dish and bake in the preheated oven for 10-12 minutes until the prawns are cooked through and the cheese is bubbly.

7.Remove from the oven and let cool for a minute before serving. Garnish with additional chopped parsley if desired.
