Spicy Hearty Kale Soup with Chicken, Mushrooms, and Potatoes

1.Heat the olive oil in a large pot over medium heat.

2.Add the diced onion and sauté for about 5 minutes until translucent.

3.Stir in the minced garlic and cook for an additional minute until fragrant.

4.Add the diced potatoes and sliced mushrooms to the pot, stirring to combine.

5.Pour in the chicken broth and bring the mixture to a boil.

6.Once boiling, reduce the heat to a simmer and cook for about 10 minutes, or until the potatoes are tender.

7.Add the chopped kale, shredded chicken, dried thyme, dried oregano, and crushed red pepper to the pot.

8.Season with salt and pepper to taste, and simmer for another 5-7 minutes until the kale is wilted and tender.

9.Serve hot, garnished with additional herbs if desired.
