Savory Cast Iron Chicken and Potatoes

1.Preheat your oven to 400°F (200°C).

2.In a large bowl, combine the diced potatoes with 2 tablespoons of olive oil, garlic powder, paprika, thyme, rosemary, salt, and pepper. Toss until the potatoes are well coated.

3.Heat a large cast iron skillet over medium-high heat and add the remaining tablespoon of olive oil.

4.Season the chicken breasts with salt and pepper on both sides. Once the skillet is hot, add the chicken breasts and sear for about 4-5 minutes on each side until golden brown.

5.Remove the chicken from the skillet and set aside. In the same skillet, add the seasoned potatoes and spread them out evenly.

6.Place the seared chicken breasts on top of the potatoes in the skillet.

7.Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.

8.Remove from the oven and let it rest for a few minutes before serving.
