Crispy Air Fryer Little Potato Pancakes

1Begin by washing the little potatoes (1 pound) thoroughly and then grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.

2In a large mixing bowl, combine the grated potatoes, finely chopped onion (½ cup), all-purpose flour (¼ cup), beaten egg (1 large), garlic powder (1 teaspoon), onion powder (1 teaspoon), baking powder (½ teaspoon), salt (½ teaspoon), black pepper (¼ teaspoon), and chopped parsley. Mix well until all ingredients are evenly incorporated.

3Preheat your air fryer to 375°F (190°C) for about 5 minutes.

4While the air fryer is preheating, form the potato mixture into small pancakes, about 2-3 inches in diameter. You should be able to make around 10-12 pancakes depending on the size.

5Spray the air fryer basket with cooking spray to prevent sticking. Place the potato pancakes in a single layer in the basket, making sure they do not touch each other. You may need to cook them in batches depending on the size of your air fryer.

6Lightly spray the tops of the pancakes with cooking spray to help them crisp up during cooking.

7Cook the pancakes in the air fryer for 10-12 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy on both sides.

8Once cooked, remove the pancakes from the air fryer and keep them warm in a low oven while you cook the remaining batches.

9Serve the crispy little potato pancakes warm, garnished with additional parsley if desired, and enjoy with sour cream or applesauce on the side.
