Perfectly Crispy Scotch Eggs with a Savory Sausage Filling

1Place the eggs (4 large) in a saucepan and cover them with cold water. Bring to a boil over medium heat, then reduce the heat and simmer for 6-7 minutes for soft-boiled eggs (4 large). Remove the eggs (4 large) and place them in an ice bath to cool for 5 minutes. Peel the eggs (4 large) carefully and set aside.

2In a mixing bowl, combine the sausage meat (1 pound), mustard powder (1 teaspoon), onion powder (1 teaspoon), garlic powder (1 teaspoon), smoked paprika (½ teaspoon), black pepper (½ teaspoon), salt (½ teaspoon), and cayenne pepper (¼ teaspoon). Mix well until all the spices are evenly distributed throughout the meat.

3Divide the sausage mixture into 4 equal portions. Flatten each portion into a patty large enough to wrap around an egg. Place one egg in the center of each patty and carefully mold the sausage around the egg, ensuring it is completely covered. Repeat for all eggs (4 large).

4Set up a breading station with three shallow dishes: one with flour, one with beaten eggs (4 large) (2 eggs (4 large)), and one with breadcrumbs (1 cup). Roll each sausage-wrapped egg in flour, then dip it in the beaten eggs (4 large), and finally coat it with breadcrumbs (1 cup), pressing gently to adhere the breadcrumbs (1 cup).

5In a deep frying pan, heat vegetable oil over medium heat until it reaches 350°F (175°C). Carefully lower the breaded Scotch eggs (4 large) into the hot oil, cooking them in batches if necessary to avoid overcrowding. Fry for about 5-6 minutes, turning occasionally, until they are golden brown and crispy.

6Once cooked, remove the Scotch eggs (4 large) from the oil and place them on a paper towel-lined plate to drain excess oil. Allow them to cool slightly before slicing in half to reveal the soft-boiled egg inside.
