Crispy Southern Fried Chicken Inspired by KFC

1In a large bowl, combine the flour, paprika (1 tablespoon), garlic powder (1 tablespoon), onion powder (1 tablespoon), thyme, basil, black pepper (1 tablespoon), salt (1 tablespoon), and cayenne pepper (1 teaspoon). Mix well to create the seasoned flour mixture.

2In another bowl, whisk together the buttermilk (1 cup) and eggs (2 large) until well combined.

3Dip each piece of chicken into the buttermilk (1 cup) mixture, allowing any excess to drip off, then dredge it in the seasoned flour mixture, ensuring it is fully coated. Shake off any excess flour and set aside on a wire rack.

4Heat about 2 inches of vegetable oil in a large, deep skillet or Dutch oven over medium-high heat until it reaches 350°F (175°C).

5Carefully add the chicken pieces to the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary.

6Cook the chicken for about 12-15 minutes on each side, or until golden brown and the internal temperature reaches 165°F (75°C).

7Once cooked, remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil.

8Let the chicken rest for a few minutes before serving to allow the juices to redistribute.
