Kalo Jam: Sweet Black Jam Balls

1.In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Mix well and set aside.

2.In another bowl, crumble the khoya and add sugar, cardamom powder, and water. Mix until you have a smooth paste.

3.Gradually add the flour mixture to the khoya mixture, kneading until a soft dough forms. If the dough is too sticky, add a little more flour.

4.Divide the dough into small balls, about the size of a marble.

5.If using, roll the balls in grated coconut to coat them lightly.

6.In a deep frying pan, heat oil over medium heat. Once hot, carefully add the dough balls in batches, making sure not to overcrowd the pan.

7.Fry the balls until they turn golden brown and are cooked through, about 5-7 minutes. Use a slotted spoon to remove them and drain on paper towels.

8.While the balls are still warm, roll them in black sesame seeds to coat them evenly.

9.Serve warm or at room temperature as a delightful sweet treat.
