Gourmet Ramen Delight

1.In a medium pot, bring the chicken or vegetable broth to a simmer over medium heat.

2.Add the soy sauce, miso paste, and sesame oil to the broth, stirring until the miso is fully dissolved.

3.Add the sliced shiitake mushrooms to the broth and let them cook for about 5 minutes until tender.

4.Meanwhile, cook the ramen noodles according to the package instructions in a separate pot. Drain and set aside.

5.Once the mushrooms are cooked, add the baby spinach and corn kernels to the broth, cooking for an additional 2 minutes until the spinach is wilted.

6.In serving bowls, place a portion of the cooked ramen noodles at the bottom.

7.Ladle the hot broth with mushrooms, spinach, and corn over the noodles.

8.Halve the soft-boiled eggs and place them on top of the ramen.

9.Garnish with sliced green onions, a drizzle of chili oil if desired, nori sheets, and a sprinkle of sesame seeds.
