Vladimir Putin's Favorite Borscht

1.In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

2.Add the grated beets, carrots, and diced potatoes to the pot. Cook for another 5-7 minutes, stirring occasionally.

3.Stir in the tomato paste, minced garlic, and vinegar. Cook for an additional 2 minutes to combine the flavors.

4.Pour in the vegetable broth and add the shredded cabbage, bay leaf, sugar, salt, and pepper. Bring the mixture to a boil.

5.Once boiling, reduce the heat to low and let it simmer for about 30 minutes, or until the vegetables are tender.

6.Remove the bay leaf and adjust seasoning with more salt and pepper if needed.

7.Serve hot, garnished with fresh dill and a dollop of sour cream.
