Russian-Style Mashed Potatoes with a Twist

1.Place the peeled and cubed russet potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water.

2.Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to medium and let the potatoes simmer for about 15-20 minutes, or until they are fork-tender.

3.Drain the potatoes in a colander and return them to the pot. Allow them to sit for a minute to let off steam.

4.Add the softened butter to the hot potatoes and begin mashing them with a potato masher until smooth and creamy.

5.Pour in the whole milk and sour cream, continuing to mash until fully incorporated and the desired consistency is reached.

6.Fold in the finely chopped fresh dill and green onions, mixing well to combine.

7.Season the mashed potatoes with salt and black pepper to taste, adjusting as necessary.

8.Serve the mashed potatoes warm, garnished with additional dill or green onions if desired.
