Sweet and Savory Pesto Egg Toast with Caramelized Onions

1.In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 10-15 minutes. Remove from heat and set aside.

2.In a separate bowl, crack the eggs and whisk them until well combined. Add the milk, sugar, salt, and pepper, and whisk until fully incorporated.

3.In the same skillet, add another tablespoon of butter and heat over medium-low. Pour in the whisked eggs and cook gently, stirring occasionally, until they are softly scrambled and just set, about 3-4 minutes. Remove from heat.

4.Toast the slices of bread until golden brown and crispy. You can use a toaster or grill them in a pan with a little butter for extra flavor.

5.Spread 1 tablespoon of red pesto on each slice of toasted bread.

6.Top each slice with a generous portion of the scrambled eggs, followed by the caramelized onions.

7.Sprinkle the chopped basil over the top of each toast for a fresh finish. Serve immediately.
