1Heat the vegetable oil (1 tablespoon) in a large skillet over medium heat.

2Add the sliced plantains to the skillet and cook for about 3-4 minutes on each side until they are golden brown and slightly caramelized. Remove them from the skillet and set aside.

3In the same skillet, add the sesame oil (1 tablespoon), minced garlic (2 cloves), sliced onion (1 small), and bell pepper (1). Sauté for about 3-5 minutes until the vegetables are softened.

4Add the grated ginger (1 teaspoon) and cook for an additional minute until fragrant.

5Season the fish fillets with salt and pepper, then place them in the skillet with the sautéed vegetables. Cook for about 3-4 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

6Once the fish is cooked, pour the soy sauce (3 tablespoons) and lime juice (1 tablespoon) over the fish and vegetables, stirring gently to combine.

7Add the fried plantains back into the skillet, tossing everything together to coat in the sauce. Cook for an additional 2 minutes to heat through.

8Remove from heat and garnish with fresh cilantro if desired. Serve hot.
