Fluffy Garlic Herb Focaccia

1.In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well to combine all the dry ingredients.

2.Add the warm water and 2 tablespoons of olive oil to the dry ingredients. Stir with a wooden spoon or spatula until a shaggy dough forms.

3.Cover the bowl with a damp cloth or plastic wrap and let it rise in a warm place for about 1 to 2 hours, or until doubled in size.

4.Once the dough has risen, preheat your oven to 425°F (220°C).

5.Drizzle 2 tablespoons of olive oil onto a baking sheet (about 18x13 inches) and spread it evenly to coat the surface.

6.Transfer the risen dough onto the oiled baking sheet. Using your fingers, gently stretch and press the dough to fit the shape of the pan, creating dimples all over the surface.

7.In a small bowl, mix the minced garlic, chopped rosemary, and thyme together. Sprinkle this herb mixture evenly over the surface of the dough, pressing it gently into the dimples.

8.Drizzle a little more olive oil over the top of the dough and sprinkle with flaky sea salt and freshly cracked black pepper to taste.

9.Let the dough rest for an additional 20-30 minutes to rise slightly while the oven finishes preheating.

10.Bake the focaccia in the preheated oven for 20-25 minutes, or until golden brown and crispy on the edges.

11.Remove from the oven and let it cool slightly before slicing. Serve warm or at room temperature.
