Ketchup-Glazed Roasted Vegetables

1.Preheat your oven to 425°F (220°C).

2.In a large mixing bowl, combine the chopped cabbage, sliced carrots, diced potatoes, chopped onion, and minced garlic.

3.In a separate bowl, mix together the ketchup, brown sugar, apple cider vinegar, smoked paprika, dried oregano, salt, and pepper until well combined.

4.Pour the ketchup mixture over the vegetables and toss until all the vegetables are evenly coated.

5.Spread the coated vegetables in a single layer on a large baking sheet lined with parchment paper.

6.Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and caramelized.

7.Remove from the oven and let cool for a few minutes before serving.
