Sweet and Crispy Rice Flour Cookies

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2.In a large mixing bowl, combine the rice flour, wheat flour, sugar, baking powder, and salt. Mix well until all dry ingredients are evenly distributed.

3.In a separate bowl, whisk together the vegetable oil, water, and vanilla extract until well combined.

4.Pour the wet ingredients into the dry ingredients and mix until a dough forms. The dough should be slightly sticky but manageable.

5.Using your hands, form small balls of dough (about 1 inch in diameter) and place them on the prepared baking sheet, leaving space between each cookie as they will spread slightly while baking.

6.Flatten each ball gently with the palm of your hand to create a disc shape.

7.Bake in the preheated oven for 12-15 minutes or until the edges are golden brown and the cookies are firm to the touch.

8.Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
