Spicy Coconut Curry Grilled Pineapple Delight

1.Preheat your grill to medium-high heat.

2.In a mixing bowl, combine the coconut milk, red curry paste, brown sugar, lime juice, soy sauce, grated ginger, and minced garlic. Whisk until smooth and well combined.

3.Take the pineapple rings and brush both sides with the coconut curry mixture, reserving some for basting while grilling.

4.Place the pineapple rings on the preheated grill and cook for about 3-4 minutes on each side, or until grill marks appear and the pineapple is slightly caramelized.

5.During the last minute of grilling, baste the pineapple with the reserved coconut curry mixture for extra flavor.

6.Once grilled, remove the pineapple from the grill and let it cool slightly.

7.Serve the grilled pineapple rings on a platter, garnished with fresh cilantro and lime zest. Drizzle any remaining coconut curry sauce over the top for added flavor.
