Spicy Chicken Potstickers with Ginger Soy Dipping Sauce

1.In a large mixing bowl, combine the ground chicken, chopped green onions, grated carrots, minced garlic, grated ginger, soy sauce, sesame oil, and chili paste. Mix well until all ingredients are evenly incorporated.

2.Take a potsticker wrapper and place about 1 tablespoon of the chicken mixture in the center. Moisten the edges of the wrapper with water using your finger.

3.Fold the wrapper in half to create a half-moon shape and press the edges together to seal. You can create pleats along the edge for a decorative touch. Repeat this process until all the filling is used.

4.Heat a large skillet over medium-high heat and add a drizzle of oil. Once hot, place the potstickers in the skillet, making sure they are not touching each other. Cook for about 2-3 minutes until the bottoms are golden brown.

5.Add 1/4 cup of water to the skillet and cover immediately with a lid. Allow the potstickers to steam for about 5-7 minutes until the water has evaporated and the potstickers are cooked through.

6.While the potstickers are cooking, prepare the dipping sauce by whisking together 1/4 cup soy sauce, rice vinegar, grated ginger, sesame oil, honey, and chili flakes in a small bowl.

7.Once the potstickers are done, remove them from the skillet and serve hot with the ginger soy dipping sauce.
