Triple-Ginger Chews

1.Put fresh ginger and granulated sugar in a food processor; pulse until finely chopped.

2.Add butter, brown sugar, and egg; process until smooth.

3.Add flour, baking soda, ground ginger, cinnamon, and salt; process briefly to mix well.

4.Add molasses and pecans; process until dough starts to ball up on blade. Remove and knead just until uniform. Wrap and chill until firm.

5.Heat oven to 375°F.

6.Roll tablespoon of dough into balls. Roll in candied ginger to coat. Place 2 1/2 inches apart on ungreased cookie sheets.

7.Bake 8 minutes, or until lightly browned and firm around edges. Let cool 3 minutes before removing to racks.
