Sizzling Smoky Potato Skillet

1.Heat olive oil in a large skillet over medium heat.

2.Add the halved small red potatoes to the skillet and season with salt and pepper. Cook for about 10 minutes, stirring occasionally, until they start to soften.

3.Add the diced onion and sliced smoky sausage links to the skillet. Cook for another 5-7 minutes, stirring frequently, until the sausage is browned and the onions are translucent.

4.Stir in the minced garlic, smoked paprika, and dried thyme. Cook for an additional 2 minutes until the garlic is fragrant.

5.Reduce the heat to low and sprinkle the shredded cheddar cheese over the top of the skillet. Cover the skillet with a lid and let it sit for about 3-5 minutes, or until the cheese is melted and bubbly.

6.Remove from heat and serve hot, garnished with fresh herbs if desired.
