Spicy Chicken Firfir with Tangy Tomato Sauce

1.Heat the vegetable oil in a large skillet over medium heat.

2.Add the cumin seeds and let them sizzle for a few seconds until fragrant.

3.Stir in the chopped onion and sauté until it becomes translucent, about 5 minutes.

4.Add the minced garlic, grated ginger, and chopped green chilies, cooking for another 2 minutes until fragrant.

5.Stir in the diced tomatoes and cook until they break down and form a sauce, about 10 minutes.

6.Add the coriander powder, paprika, turmeric powder, and salt to the tomato mixture, stirring well to combine.

7.Add the shredded chicken to the skillet, mixing it into the sauce until well coated and heated through, about 5 minutes.

8.Remove from heat and let it sit for a couple of minutes to allow the flavors to meld.

9.Serve the spicy chicken firfir over torn pieces of injera or flatbread, garnished with fresh cilantro.
